Essentially H20 wireless is using AT&T's network. All you have to do it plug in their sim and you're good to go. no need to jailbreak or unlock :)

One other thing I can't get to work on the iPhone using H2O is the visual voice mail. When I try to go to the voice mail screen it dials the voice mail number directly... small trade off I guess.
