honestly 1200 watts is overkill - grab a nice 800-900 unit and you will be fine, and don't cheap out on it by grabbing a crap brand like diablotek

it's not the PSU's that will burn out, it's your computer's components - you are basically putting 2 fuses in parallel when you should only have 1, thus it won't trip when it should

Running a PSU at less than ~70% of it's rated load is actually where you'll see the worst efficiency. As you push the envelope of a PSU's rated output it's regulation will start to suffer.

You definitely want more than 10% headroom when buying a power supply. Running one at 90% load constantly is going to cause it to burn out quickly and it's terrible for efficiency.
