its not accurate to say they "are ethernet". the 1.4 spec simply supports a channel for ethernet.
HDMI cables are the same. same pinout, same number of wires, same shape. they might have the pairs...

catX cables with RJ-45 connectors are frequently referred to as "ethernet" cables, but there's a lot of other information out there. You can get a post-graduate degree in that area :)
