Always better to go with the single fastest card you can afford. If you already have 2 2GB gtx 560 ti's in sli it would not be worth the upgrade unless you play games that do not take advantage of...

I used to have 2 6870s and eventually replaced them with a 7970 - I'd try to sell your one 560 (assuming you already own one) and get the 680. To me it's not worth having two cards due to the heat...
