There are lots of people that never sharpen their knives. In a pinch most food items can be cut with a dinner knife. It might not be a good idea, but it's certainly possible.

I have several Komachi knives. I haven't had a problem with the coating, even after self sharpening them. They do dull relatively fast, but for the price, you can afford a nice sharpener.
