Absolutely true. If the title happened to be "Staff Assistant" I would recommend starting the first bullet point with something similar to "Served as the de facto AP Clerk, processing blah blah blah"

Here's the rub, you can call it "Accounts Payable Specialist" but anyone hiring will know that means clerk. Nothing wrong with "Accounts Payable Clerk". If you are after an AP job use it.
