What's your favorite Christmas cookie?

19,213 2,792 December 1, 2008 at 02:48 PM in Grocery
I'm always on the lookout for new recipies - what is your family's favorite Christmas cookie?

My family goes nuts over spritz. I'm only allowed to make trees and the flower with a red hot in the center. I do a batch with splenda for my mom and call them Festivus cookies. Coverlaugh

I use an electric press for these. I'd be lost without it - I probably make 6 batches over Christmas.

Joy of Cooking Spritz

Makes about 5 dozen 2" cookies

Beat on medium speed until very fluffy and well blended:

1/2 lb (2 sticks) unsalted butter, softened
3/4 cup sugar

Add and beat until well combined:

2 large egg yolks
1/4 tsp salt
1 1/2 tsp vanilla
3/4 tsp almond extract

Sift over the top and stir in until well blended and smooth:

2 1/4 cups all purpose flour

To press the cookies:

If the dough seems soft and difficult to handle, stir in 1 to 2 tbs flour. Cover and refrigerate until slightly stiff but not at all hard, 30-40 minutes.

Position a rack in the upper third of the oven. Preheat to 350.

Press out the cookies leaving about an inch between them. Decorate as desired and bake 1 sheet at a time for 9-12 minutes. Remove the pan and let stand for a few minutes before removing cookies to a rack to cool.

i want to make a good sugar cookie with crushed up candy canes in it drool
drool I have made a couple of different of versions of sugar cookies with mint and no one ever likes them but me. Recently, I have been taking Pillsbury dough (the kind already portion and you just slap on a tray) and squishing them flat and sprinkling crushed candy canes on top. Heck of a lot faster and pretty darn good.

Here is my favorite Christmas cookie. They literally melt in your mouth, I have never had any other cookie with this texture. I like them even without rolling in sugar.

Lemon Cream Cheese Cookies

3 sticks of butter softened
8 oz cream cheese (low fat ok, fat free is not)
2 cups powdered sugar
1 tbs vanilla
2 tbs of lemon juice
1 tbs grated lemon rind
4 cups of cake flour (must be cake flour)
2 cups chopped pecans

Cream the butter and cheese until fluffy. Add powdered sugar and beat until smooth. Stir in vanilla, lemon rind, and lemon juice. Add cake flower and mix well. Stir in pecans.

Drop by half teaspoon onto ungreased cookie sheet. Bake at 300 F for 20 minutes. While still warm roll in additional powdered sugar. Once completely cool, roll again in powdered sugar.

Can't find the date cookie recipe at the moment but here's two good recipes I got from my grandmother. She was such a good cook. Drool

Ice Box Cookies

2 C. brown sugar
1 C. butter
2 eggs
3 3/4 C. flour
1 t. baking soda
1 1/2 C. pecans
1 t. vanilla

Cream sugar and butter. Add the rest of the ingredients. Roll into logs, wrap each log in wax paper and refrigerate overnight. Cut into thin slices of dough and bake on a greased cookie sheet in a medium oven until done. Note: You can freeze the rolled up logs and they will last for 3 months in the freezer.

Molasses Crinkles

3/4 C. shortening
1 C. brown sugar
1 egg
4 T. molasses
1/4 t. salt
2 1/4 C. flour
2 t. baking soda
1/2 t. cloves
1 t. ginger
1 t. cinnamon
1 C. to 1 1/2 C. pecans

Sift together all dry ingredients. Cream sugar and shortening. Add the egg and molasses. Add the sifted dry ingredients. Chill for one hour. Roll into balls and then roll in granulated sugar. Place the balls on a greased cookie sheet, indent each ball and put two drops of water in the indention. Bake at 300 degrees for 10 minutes. Be careful not to over bake!
