What's your favorite Christmas cookie?

19,213 2,792 December 1, 2008 at 02:48 PM in Grocery
I'm always on the lookout for new recipies - what is your family's favorite Christmas cookie?

My family goes nuts over spritz. I'm only allowed to make trees and the flower with a red hot in the center. I do a batch with splenda for my mom and call them Festivus cookies. Coverlaugh

I use an electric press for these. I'd be lost without it - I probably make 6 batches over Christmas.

Joy of Cooking Spritz

Makes about 5 dozen 2" cookies

Beat on medium speed until very fluffy and well blended:

1/2 lb (2 sticks) unsalted butter, softened
3/4 cup sugar

Add and beat until well combined:

2 large egg yolks
1/4 tsp salt
1 1/2 tsp vanilla
3/4 tsp almond extract

Sift over the top and stir in until well blended and smooth:

2 1/4 cups all purpose flour

To press the cookies:

If the dough seems soft and difficult to handle, stir in 1 to 2 tbs flour. Cover and refrigerate until slightly stiff but not at all hard, 30-40 minutes.

Position a rack in the upper third of the oven. Preheat to 350.

Press out the cookies leaving about an inch between them. Decorate as desired and bake 1 sheet at a time for 9-12 minutes. Remove the pan and let stand for a few minutes before removing cookies to a rack to cool.

Two packs of cream cheese.
One pack of Oreo or Nutter Butter cookies.
One pack of almond bark (white for Oreos, Dark for Nutter Butters)

Crush the cookies with a food processor.
Mix by hand with the cream cheese.
Refrigerate until stiff. (Insert bad joke)
Roll cookie/cheese mixture into 3/4 inch balls. (Insert another bad joke here)
Dip balls into melted almond bark. (Insert yet another tasteless joke)
Place balls on cookie sheet covered with wax paper. (It's getting old)
Place sheet in freezer.

Quick, easy, inexpensive, delicious

Almond bark being chocolate bar with chopped almonds in it? So I could just use chocolate?

Bad Joke: Teabag!

'tis true. It's actually cheaper for me to pay to check a second bag at the airport than to ship packages up to my family this year. laugh out loud

EGGNOG SNICKERDOODLES

1/2 cup butter, softened
1/2 cup shortening
2 cups plus 5 tablespoons sugar, divided
1 egg
1 teaspoon rum extract
1/2 cup evaporated milk
1/2 cup refrigerated French vanilla nondairy creamer
5-1/2 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1/2 teaspoon ground nutmeg
ICING:
1 cup confectioners' sugar
5 to 6 teaspoons refrigerated French vanilla nondairy creamer
Directions:
In a large mixing bowl, cream the butter, shortening and 2 cups sugar. Beat in egg and extract. Combine milk and creamer; set aside. Combine the flour, salt and baking soda. Gradually add to the creamed mixture alternately with the milk mixture.
In a small bowl, combine nutmeg and remaining sugar. Shape dough into 1-in. balls; roll in nutmeg mixture.
Place 2 in. apart on ungreased baking sheets; flatten slightly. Bake at 350 for 10-12 minutes or until lightly browned. Cool for 2 minutes before removing from pans to wire racks to cool completely.
For icing, combine confectioners' sugar and enough creamer to achieve desired consistency. Pipe snowflake designs on cookies. Yield: 7-1/2 dozen.

Even those these contain no eggnog, they taste just like it! They are soft and chewy and purely sinful!!
They are just as yummy without the icing IMO.
