What's your favorite Christmas cookie?

I'm always on the lookout for new recipies - what is your family's favorite Christmas cookie?

My family goes nuts over spritz. I'm only allowed to make trees and the flower with a red hot in the center. I do a batch with splenda for my mom and call them Festivus cookies. Coverlaugh

I use an electric press for these. I'd be lost without it - I probably make 6 batches over Christmas.



Joy of Cooking Spritz

Makes about 5 dozen 2" cookies

Beat on medium speed until very fluffy and well blended:

1/2 lb (2 sticks) unsalted butter, softened
3/4 cup sugar

Add and beat until well combined:

2 large egg yolks
1/4 tsp salt
1 1/2 tsp vanilla
3/4 tsp almond extract

Sift over the top and stir in until well blended and smooth:

2 1/4 cups all purpose flour

To press the cookies:

If the dough seems soft and difficult to handle, stir in 1 to 2 tbs flour. Cover and refrigerate until slightly stiff but not at all hard, 30-40 minutes.

Position a rack in the upper third of the oven. Preheat to 350.

Press out the cookies leaving about an inch between them. Decorate as desired and bake 1 sheet at a time for 9-12 minutes. Remove the pan and let stand for a few minutes before removing cookies to a rack to cool.

Maple Spritz cookies are the best. A must have for Christmas.
Not sure of te exact recipe my wife uses, but found this one online.

I just tried this recipe and they are incredible. Best Oatmeal Raisin cookies I have ever had. I am not usually a fan but they are DH's fave. I am glad I tried it, just the right amount of spice and they are chewy and bettery. Yum.

Mine is the only 5 star review showing. Coverlaugh Seriously, people must have some serious operator error going on because I've had mine for several years and it's still going strong. It's not too loud and the cookies come out perfect every time.

It would work if you can get it on there rounded, otherwise, you just have a broken yolk, either way, they are great snacks for the kids. Another one we always liked to do was
chocolate peanut butter cookies, quick, easy and no baking:

Put peanut butter between 2 ritz crackers (like an oreo), dip in melted baking chocolate, or almond bark and cool on wax paper. You can put sprinkles on top while still warm too...

The cookie dough you use it it is relatively "loose" (for lack of a better word) or will it work with pretty firm dough? The maple spritz cookies my wife makes are a pretty firm dough.

It's pretty loose, but firm enough to hold the shape of the press. If she doesn't refrigerate her dough and uses room-temperature butter it should be fine.

Don't have my recipe handy but this one is about the same, found it on Allrecipes.com. These are yummy and always disappear quite quickly.This is my favorite cookie!

Date Nut Pinwheel Cookies

"This recipe makes three rolls of dough, which can be frozen until ready to bake."
yield 5 dozen

* 1 cup butter (at room temperature)
* 2 cups packed brown sugar
* 3 eggs
* 1 teaspoon vanilla extract
* 1 teaspoon ground cinnamon
* 1/4 teaspoon salt
* 1/2 teaspoon baking soda
* 4 1/2 cups all-purpose flour
* 8 ounces dates, pitted and chopped
* 1 cup finely chopped pecans
* 1/2 cup water
* 1/2 cup white sugar
DIRECTIONS
1. Cream the butter and brown sugar together in a mixing bowl until smooth. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla. Sift the cinnamon, salt, baking soda, and flour together in a second mixing bowl. Slowly stir the flour mixture into the egg mixture until evenly blended.
2. Divide the dough evenly into three portions and place each on a square of waxed paper. Wrap and refrigerate until firm, about 1 hour.
3. Meanwhile, make the filling by combine the dates, pecans, water and white sugar in a saucepan set over low heat. Cook and stir until the filling has a paste-like consistency. Cool slightly.
4. Working with one portion at a time, roll out the dough on a lightly floured surface to make a rectangle about 1/4 inch thick. Spread 1/3 of the filling evenly over the dough; roll up to make a log. Repeat the process with the remaining dough. Refrigerate until firm, about 1 hour.
5. Preheat oven to 350 degrees F (180 degrees C). Lightly grease two baking sheets.
6. Using a sharp, serrated knife, cut the rolls into 1/4 inch slices. Place the slices on prepared baking sheets.
7. Bake in preheated oven until set and lightly browned, about 15 minutes. Cool on racks.

I am done...17 varieties this year...may be a record in my houshold...my Dh has my digital or I would take a picture of my dining room table, which is full of plates of cookies!
