Also if I bought a used disc of the Gold Edition would my son not be able to use all the extra Gold content because there is just one code and the original person already used it?

Unless they stated they didn't use the digital card then yes no extra content and all you would get is the base game.

Now if you purchased a used one from GameFly then you would get a new card with an unused code.
