Guessing those are silicone covered handles by the looks of them, which should mean they are fine in the oven up to a little over 400*F. That covers most of what you would be doing stove to oven but something to consider if you cook a lot.

How? I have yet to master stainless and too afraid to try again and making a mess that takes too long to clean =/.
I remember watching a video saying something that you have to wait till the side is finished carmalizing so it lifts itself from sticking? Or something
Select by Calphalon is their lowest quality set. They're very thin and light weighted. Full comparison chart of all series's here: http://www.calphalon.com/en-US/co...comparison. I'd recommend get at least tri-ply for stainless steel and unison for nonstick—I have both and you can tell by weight that they're high quality pans.
I have this set. While they are high quality, I agree with the fellow above that they're hard to cook with. They also get dirty real easily, Id recommend Barkeepers to keep them clean.

I had lots of protein stuck to the pan too when I first started using stainless steel. In my experience, the trick to not sticking is you need to heat the pan enough before adding oil; and add food when oil is hot but not smoking. Also don't move the protein all the time—let it sit and form a nonstick crust then you can move it around.
I received this set 2 weeks ago and have been using the pots and pans every day since, Each time the pots and pans heat quickly and evenly and they're not too heavy. Also very easy to clean. Overall I am very pleased with this set.
