Physical copies for all switch games tend to run more (about 2x more)
The reasoning is that the packaging and materials (especially the flash card) is expensive to make.
Most of these games are also limited run, so once they run out of copies, you have no choice but to go digital.
I personally would not spend this much on this game. It's a good game, but just not "I need to have a physical copy" good
Generally the physical versions start at $30 for a lot of smaller games.
This game is $40 for either version typically, unless you have GCU or some other discount.
If you're looking for a similar game but cheaper, check out Enter the Gungeon.

You said you wouldn't spend that much on a physical copy, which I took to mean you something other than you were intending.
Regardless, a game is worth what someone is willing to pay for it, but I do agree that if you're buying it digitally, this is too much at this point.
