Carcassonne is a great game that is 2-5 but I think best with 2-3 players. Tile-laying strategy game. And games are fairly quick, aorund 20-30 minutes. And there are layers of strategy from simple to more complex. My wife and I play it a lot
Pandemic can be played two for sure, and as another poster said it's a co-op game, so all players are on the same team and you're trying to beat the game rather than each other. Same thing goes for Mansions of Madness, it's cooperative and can be played with two people.

If you play Pandemic with two players, I'd recommend that each player plays with 2 roles (simulating a 4 player game), so you'll have 4 pawns to try to fight the disease spread, adding some extra variety of the roles.
