I'm thinking about installing the switch and swap out my phone jacks with Ethernet ports. I already have Gigabit service, will this by enough to get full gigabit speed? I pull about 800mbit when I connect PC directly to the router.

Should be enough but you'll have to put the router between the switch and the phone jacks.

I checked out some Youtube videos. Looks like the hardest part is arranging all the Cat5 cables and plug them into the router. I thought I test 1 room first, but I have no idea which cable goes to which room.

This will not speed up your connection. This will allow more equipment in your house to connect to that router.
