Flatter 20-20khz mic response without the rolloff of the iPhone mic, stereo Mic vs mono, hires 96khz 24-bit recordings (vs 48khz 16-bit), 15 hour non-stop recordings, better mics likely handling higher dB sounds without distortion and less noise, etc.
Ie. It records better sounds with less distortion and noise than that lame iPhone!

That said, iPhones have never been known for High Quality audio mics.
Heck, even my old LG G6 has higher quality mics with a 129dB spl max, can do wav/flac 192Khz 24-bit recordings.

Xlr only needed if you're going to spend money on high quality external mics for recording. Ie. You will spend more money on the mic than this recorder.
At that point, might as well start off with the latest zoom recorders as the baseline at several hundred, then sky is the limit.
