Notary and closing
Here is what you can expect or ask for from my experience:
1. New pen for signing wiped thoroughly
2. Pen stays with you after signing
3. Only material they will touch would be your ID
4. ID would be wiped and returned back
5. Can expect gloves to be worn
6. Signing can happen in your front yard or in your garage
7. If you have a Costco table then you can sit on either sides to maintain distancing
8. Masks might be recommended given new guidelines
9. Plus discuss with the notary!!

There are a lot of calculators out there that will help you figure out if it's worth it or not based on your current loan terms.
If you had a 30 year and you're 16 years in, you have 14 years left. If you refi and get a 15 year mortgage, the payment will be a lot lower than your current payment. Just continue to make you're current payment and you'll pay it off even faster.
Let's say you have a 30 year mortgage on a $200,000 property at 6%. You say you're 16 years in. After 16 years, there would be $136,000 left in principle on that mortgage. Over the next 14 years, you'd still pay another $65K in interest.
If you refi the $136K balance to a 15 year mortgage at 3.25%, the payment drops from 1199.10 to 955.63. But if you keep your payment the same and make $243.47 in extra payments every month, you'll actually pay it off in 11 years, and you'll only be paying $27K in interest instead of $65K in interest.
