Dell XPS, HP Spectre 13, surface series...all with 8th Feb Intel cpu, use LPDDR3 memory.....reason...until 10th Gen Processors, none support LPDDR4 Memory. For using LPDDR4 memory, a separate memory controller is needed which is not same as standard ddr4 controller and 8th Gen Processors lack that.
I get you sentiment, 16gb should be standard by now. But the soldering, it's less than half an inch thick so they have to solder it cause a slot would make it too tall to fit.
If you have the same speed of cpu, ram, and nvme drive on this pc and say a HP zbook studio g5 does the gpu play a big part in the speed of the pc for regular application usage? Is the added weight from the Zbook comes down to just the added weight of the gpu? If not for gaming, a lighter laptop would offer the same speed for general usage? I would have grab this instead of the zbook studio g4 i got on ebay for $630 with only 1080p. This is a better deal for $800? I guess maybe without the Ram upgrade option it might kill the deal, but 8gb might be plenty for general usage.

You have to provide the full spec of your zbook Studio G4 before we can comment.
I am typing from this laptop- these exact specs. Love the screen. The keyboard is not bad for such a small footprint. The laptop feels really premium. I wish the RAM was upgradeable.

If just to load office app i would think the most crucial aspect would be to upgrade to NVme drive?
