I was just at the local Costco and saw that the beef tenderloin filet mignon is $9.99/lb. One of the workers at the meat department said that he doesn't know why it is so cheap, but it's currently selling for that price (no coupons, special mark downs, etc.)

I bought 1 pack to try and it was very good. Like someone here mentioned, it's not a $250 filet mignon but it was great for what I paid. The packs came in around 4-5 lbs which will be weighted and charged accordingly. It's FROZEN in a sealed pack. The attached receipt is for 2 packs.

Quick question on step 3... any butter will smoke heavily when pan temp is ~600F, which becomes an issue for me every time i attempt to do so. How do you guys deal with it??

Thinking the same. In my area Costco has packages of usually 4 prime filets for $14.99/lb so would rather go with that.

650F is way past the smoke point of butter. Searing with butter this hot will give you a ton of smoke and burnt butter flavor.

You can cook Sous Vide to medium rare in about 3-4 hours and be safe.
