I have 64 and think it's a good compromise. All dash cams these days do loop footage. I would say size it such that you can get like 2 weeks of recording before overwriting would be good
Agree with iRenaissanceMan, 64GB is a good balance. At full resolution 64GB at least records around last 6 to 8 hours. Depending on how much you drive, you can calculate. It is enough to get or download video clips in case if any incident happened.

Any "high endurance" SD card is supposed to be better than regular cards. This is because high endurance cards are made to support continued write like those in video monitoring and dashcam usage.
