I have/had S6/S7 256GB/S7+/ipad pro 11/12.9 2018.
In day to day use I don't feel a lot performance difference between all these tablets.
S7 256GB has 8GB RAM which does help in DEX mode with a lot of tabs and apps opened.

I considered the S7 (as it was available - would have been $100-ish more), but I love the OLED screens on these, and the S7+ was just too expensive and really too big. these 10-inch range tablets are the limit in my opinion for a tablet. I had a Tab S2 prior to that S4, in the 8" sceen size - and that is actually one of my favorites, but as my eyes age, bigger screens are better - to a point, of course.
