Just buy some generic crap at Amazon like this one I own: https://www.amazon.com/gp/product/B08JBZVQCV
1080p60 is fine for 99% of folks there in streamland. Plug-n-play, Mac, PC and Android phones.
They all have it now.

I've got a Nikon, though, so have been eyeing this (for other needs, too) so I just may bite!

If you just need to capture a clean hdmi feed to use with something like OBS the Cam Link 4k is a better choice since it's smaller and cheaper and can take a 4k signal that you can crop/resize for your stream.
if so, what app to view?

It only got real 60fps when dropping down to 720p. 1080p30 or 720p60 is still probably fine for 90% of people for webcams but just be aware it's a crapshoot with these cheap cards and you get what you pay for. Not recommended for gaming unless you already have an HDMI splitter since it will introduce noticeable lag.
