Definitely Sette 270. I have the WI and it's definitely best bang for the buck. You can google some differences and comparisons but just speaking from my experience thus far with Sette 270

Thanks. Biggest difference I could find is the burr (cone vs flat), but they both seem to go fine enough for espresso and have enough steps (or stepless) to dial-in accurately. Based on your response I'll go with Sette 270 before the run out.

Id go with vario, I have a sette 270 and its just not reliable ie ive had it replaced entirely once and the whole motor assembly replaced on another instance

Would there be any benefit in the Sette 30 over the encore for Aeropress medium grinds?

If I had any sense I'd at least wait till my oxo bites the dust.

Yes, they usually sell out quick. the 270 is usually the first to go. Sometimes the WI goes first.

Haven't had any issues with mine. And if you do, Baratza typically has great customer support and will replace any defective item Free of Charge.

For espresso, certainly recommend the sette 270 if you can afford it. Don't go with the wi (goes with weight instead of a timer) as the timer is consistent enough and more reliable. Some reviews on home-barista have talked about the vibrations of the grinding messing with the scale.

Also note, you should buy a grinder of reasonably equivalent quality to your espresso machine. I pair my Sette 270 with a Breville Dual Boiler (~$1200 I think?), and they work well together. Considering upgrading to a Decent DE1+ (~3k). Based on my home-barista reading, I may want to upgrade that soon-ish... perhaps to a niche but I'll be missing the hopper/timer. Don't REALLY want to weigh beans every time I make espresso.

Are any of these better than the virtuoso? Or worth getting instead?

Depends on what you're using for. If you're doing drip or pour over or (possibly) french press, Virtuoso should suffice. For espresso you'll need to look into Sette 270, 270wi or Vario.
