Because it's a theory.
Just like the theory of gravity.
If you like, you can phrase it as "the theory of evolution is fact".
A scientific theory isn't a guess, it's how it all works.
You might want to look into why a scientific theory is different from other theories.

You throw a 'provorbial apple' into the air, it has only one way to go. Lets see what evolution says.

They are both the same kind of scientific theory.
There is literally no difference.
Evolution "says" that given enough time, an organism will adapt to it's surroundings.
Over a longer period of time, those surroundings will change and the organism will adapt to those changes.
That's evolution.

So, I don't think it's as simple as just saying people don't believe X or Y.

Here's an example for you.
Back in 1991 I was in College Biology and the text books taught that they could identify brain cells, because they didn't replicate. Fast forward 15 years and Scientists discovered that brain cells do replicate, just so slow that they never realized it before that.
So yes Science Fact is Fact, until it isn't, but is it ever really fact if it is eventually disproven?
This is partly why I believe they label it a Theory, because they know parts of it will be discredited over time. Also, Darwin didn't actually believe all the stuff we know of as Evolution today, so that's more evidence of the changing nature of science.
