Trying to decide between the rated and unrated versions of Smokin' Aces 2: Assassins' Ball. Any advice?
Unrated usually means they put back in all of what the MCAA made them pull out to get the rating they wanted. Sometimes it is just them putting all of the deleted scenes back in that they had to cut to make the time needed for theaters to get in as many showings as they can. It can add anywhere between 10 mins or an hour. I usually always go unrated as it was the original product the director wanted before it was messed with by others.

Not necessarily. "Unrated" means just that: It wasn't rated by the MPAA. It doesn't mean it's "better" or "less censored" or "the version that didn't get messed with", just that it didn't go through the MPAA rating process or isn't the version the certificate was issued for. Generally, the "unrated" version is likely a cut that would've garnered an R-rating if it had been certified; studios rightly feel more money can be made from a PG-13 rating. (Yes, yes, Deadpool, Logan, The Hangover and Matrix movies, etc. made hella bank, but in general, PG-13 is a safer bet.)
But if Pixar inserted another shot of a sunset over the ocean into Finding Nemo, they could release it as "unrated" and hope the people who think "unrated = moar gud stuf!" would buy it in hopes of the rumored "Dory lets the shark support group run a train on her" scene was put back in.
More seriously, the difference can be as little as a couple of F-bombs due to the MPAA's ludicrous "one F-bomb rule." (i.e. you can only use the F-bomb once and keep PG-13 unless it's in a sexual context - "Do you want to [eff]?" - which is automatic R. You can use it twice if 2/3rds of the board vote to approve an exception which is how The Martian got away with two.) Movies like Touching The Void and The King's Speech got Rs because of a handful of frustrated F-bombs. No violence, no sex, nothing pruient, but don't let the kiddies see it! Here kids, watch the PG-13 action movies where people get machine-gunned bloodlessly, but don't cuss too much.
Then you can turn on basic cable and watch The Walking Dead which would be so R-rated in a theater. So dumb.
I think it's at the very bottom of the list. Cheers!
I'm tempted to offer some suggestions to tweak your rubric, but Wild Tales is a foreign film (subtitled) so fighting to get it more attention/icons is a lost cause with most casual viewers. I'll let it go.
