I already have the 11 7/8". Thinking of getting the small 9.5" for fried eggs and omelets.
are you cooking acidic foods or using soap to clean? sometimes that will cause it to rub off. if not cooking bacon helps a lot. i use a nylon brush, chain mail and sometimes paper towels to clean my carbon steel wok and pans.
