For those interested, the bottom/cooking surface diameters below. The 9.5" in pan is #062002, and the 11" is #062004. I'm interested with the 12 or even 14" pans but the absence of a helper handle worries me.

Excellent price on a great pan. I bought it last year for about $7 more. Be aware, this is a small pan in terms of cooking surface and does require a few rounds of seasoning and more careful maintenance. I highly recommend getting the larger 11 inch.
Can anyone comment on if this brand has issues with the base not being flat? I have a flat top range so these issues are a bigger deal.
Also the welded handles instead of a riveted handle such as the mineral B pan.

Excellent price on a great pan. I bought it last year for about $7 more. Be aware, this is a small pan in terms of cooking surface and does require a few rounds of seasoning and more careful maintenance. I highly recommend getting the larger 11 inch.

Been waiting for another carbon steel pan deal and picked up the 11". I have a carbon steel wok which is excellent for stir fry (of course) but also makes the best fried eggs. With this I won't have to take out the big wok just for eggs, and I look forward to using it for searing steaks (not into the idea of having a heavy cast iron pan just for one thing).

Does anyone know the right way to season this? I've seen oven seasoning, over the stove top, cooking potato skins with salt on it, etc. I've used avocado oil cuz of the high smoke point, but can't seem to get it. The "seasoning" kinda rubs off after cooking. Any help would be appreciated.

are you cooking acidic foods or using soap to clean? sometimes that will cause it to rub off. if not cooking bacon helps a lot. i use a nylon brush, chain mail and sometimes paper towels to clean my carbon steel wok and pans.

I have had their 10-5/8" for many years and it's excellent (it was my daily driver); I would go so far as to say I like it as much as my vintage Griswold 9 cast iron. With that said, even that size was a bit small for my family so I would be concerned about this 9-1/2" model for any family larger than three people. We recently also got a MadeIn 12 carbon steel which has been great but is quite a bit more (I would still recommend it for larger families).
