I have both sets. Even though allclad has the name recognition and is made in the USA, I have to say the Cuisinart is better. The design of the handle is better (allclad handles are awkard, IMO... the angle is too high and so it's hard on the wrist. I am told it's designed to be carried differently, with palms down versus facing up, but that's just not how I lift my pots and pans), and the thickness of the pans is superior with the Cuisinart (unless you prefer thinner and lighter). The rim of the Cuisinart is also curved, making pouring easier and cleaner than the allclad.) I have a couple of other allclads that were NOT part of this set (and were much more expensive than this set), and those are better - meaning thicker, with curved rims.) When I purchased these sets, I did not know about these details until I purchased and used them regularly, which I do today.

You're the best! I got the cuisinart one as an early wedding gift, but we've been waiting to open them until we're married and moved into our new house, so we can start off with the new set of Cuisinart ones. Thanks for the detailed review. I wish I could give you more than 1 rep

You do not. Stainless Steel is amazing for building sauce and flavors that used the bits stuck at the bottom (called fond).

That said with some oil and proper handling (e.g. heat up the pan and then add oil to the hot pan and heat the oil), you can make it close to nonstick.

I personally stick to a non-stick pan when I am cooking something I don't want to put much oil/butten in, such as daily fried eggs/scrambled eggs. I understand the potential health risk, but from my extensive research seems that good quality pans such as OXO goodgrip are PFOA free and hence safe as long as not overheated, scratched, hand washed, and replaced every few years.

We have the Cuisinart Multiclad Pro set and one of the bottoms warped pretty quickly. Not as big of a deal if you have a gas stove, but is pretty annoying for a glass cooktop.

FWIW - My All-Clad are beginning to show slight warp matching the shape of my induction "burners" after 18 months of use. Great on gas but not bullet proof on induction. Cuisinart Multiclad Pro has even more warp on induction. All-Clad is built better than Multiclad Pro but Demeyere Atlantis is built better than All-Clad.

A trick you see chefs do: move the meat around a lot in the first few seconds that you lower it into the hot fat/oil/butter. This will quickly cook the outermost layer, helping it not to stick when it's time to flip. Versus if you just throw raw meat in a hot pan and leave it there, it might stick regardless of how much fat you've preheated in the pan.

Though, I understand their theory, not all Demeyere Atlantis is full clad. Some of their items are clad based. I do like their fully clad from that line, like their frying pans. However, if you are looking for a full set of fully clad from demeyere, their industry 5 line would suffice and is better than All-Clad's D3 and D5 series. If you are diehard American made only, I would look at heritage steel. But IMO if you want advanced technology and lighter weight like a triply, go with the Hestan nanobond series.
