If you have access to IKEA they added "kitchen island" countertops to their set you can get 74" x 40"

How hard do you think it would be to add a tabletop for someone who is not handy at all? Does the stand come with screws? Would screws be needed even?

You can purchase a 48"x25" unfinished solid birch countertop for about $99 or a 72"x25" for $119. I suggest going this route as it's inexpensive, can be cut to size, is solid, and can be finished however you want.
