"I know 5.1 setup obviously will beat a 2.1" which is true but to know if it's a "huge step above" for you, you would have to listen for yourself.
Since it sounds like you don't like/want a "large" footprint, tight budget or spend as little as possible and you found the soundbar "does a good job", kinda answers your question.
As far as a receiver you only need 5 channels and this doesn't require a lot of power to run especially if a soundbar is sufficient for you and layout.
Unlike a soundbar you have to run speaker wire/cable to the speakers and sub in your layout.
The trade off, you sacrifice the quality of the sound

There are a few very expensive sound bars that sound VERY GOOD.
What model is your yamaha?
Don't worry about an avr's "sound". When set to "flat", most humans would be hard pressed to hear a difference between the "good" brands (Yamaha, DENON/Marantz, etc) on your average home speakers.
Get a Avr that is a future-proof as possible and at the top of your budget. Audyssey xt32 or the top tier YPOA "could" give you the best sound due to equalization for your unique room.
