Alton Brown recommended. Great on popcorn. They have another variety for mac and cheese (think Kraft powder) or there are modifications you can find online using this.

You know, cheese is something many people like eating. So I guess that's a good reason.
People who are gluten free. LOT cheaper to use this cheese with gf macaroni than buying gf Kraft Mac and cheese.

I'm currently in organic chemistry, I certainly wouldn't believe this. Stay away from trans fats period.

Edit:

1) The label shown says 0g trans fat (Albeit, NO company is required to report trans fats on labeling if below 0.49g).

2) No ingredients listed indicates that it contains trans fats.

3) It does contain 0.75g of saturated fats which is indeed harmful fats. (Not that this brand is promoting this to be a healthy food)

It doesn't NEED to be, though the shelf life would logically be increased if refrigerated. We're also told to refrigerate natural peanut butter, but not peanuts. I just bought a 2-pound jar of White Cheddar from Amazon Warehouse for $6.25. New, expires Dec 2021

I did not want to create a new post because there are only 19 left at this moment, but i figured you guys might be interested!

EDIT:. They're gone now, but keep checking & good luck. Throughout the day i saw them add $6.25 ones with dates from Jan'22, Feb'22,June'21 & Oct '21. i'm hoping to find similar deals on some of their other powdered stuff that i'm curious to try but can't justify paying regular price to just experiment Smilie
