Retired Journeyman Butcher / Meat manager with over 34 years of experience I've never seen a butcher ever use that knife, Over 95% of professional Butchers use Victorinox.

I don't care about this knife.

Want to say how obnoxious it is to read repeated bad info like yours. The type of person that puts knives in a dishwasher, or leaves knives wet aren't in position to comment on carbon steel knives which are used by people who actually know how to cook worldwide.

Maybe say, "These knives have to be kept dry at all times" or nothing at all.

So annoying. You are why every time I order fries they come without salt.

You didn't take care of a carbon steel knife properly then. It's not simple like stainless. You cannot leave them wet.

Thanks, in for one.
One small nit: I think that a slicer is used for cutting slices off a roast, and this is used for cutting roasts off of your large animal of choice.

Love these knives! If you get bored try customizing the handle. A little sanding goes a long way

I have an older OK butcher that I found in a thrift store. You can hone these things wicked sharp.
