Retired Journeyman Butcher / Meat manager with over 34 years of experience I've never seen a butcher ever use that knife, Over 95% of professional Butchers use Victorinox.

Want to say how obnoxious it is to read repeated bad info like yours. The type of person that puts knives in a dishwasher, or leaves knives wet aren't in position to comment on carbon steel knives which are used by people who actually know how to cook worldwide.
Maybe say, "These knives have to be kept dry at all times" or nothing at all.
So annoying. You are why every time I order fries they come without salt.
FYI: Ontario Knife Company was founded in 1889 in Naples, New York. They are currently located in Franklinville, New York, in Cattaraugus County, where most of their products are manufactured. Ontario Knife Company is most well known as a supplier of military knives.

I have one of these passed down from my grandad - they last forever, and can easily get razor sharp with stones, but agree you have to constantly keep oiled. I'd recommend getting the Victorinox as stated above, much easier to maintain and pretty much the gold standard for modern butchery.

This knife is great for slicing large chunks of meat, but it's made of carbon steel and the average user will not know how to properly care for it. I would not recommend this knife to most people even though I have one myself and love it.
This is the BBQ pit boys knife, that's why it's "sort of famous"
I have it. It will take an edge with a good sharpener, but it doesn't hold the edge very well. Yes you have to oil it after washing. It's a good beater BBQ knife, that's all it is.
