Edit - when this hit Popular so quickly with only 3 TU's, I wondered what was up, but after seeing the deal, the SD deal editors knew what they were doing - this is a really good deal. If you're looking for a Japanese knife, I'd jump on this... Sur La Table[surlatable.com] and BB&B are both selling it at $180. Also, look at Sur La Table's description... it's a MUCH more detailed description about the knife than what you'll find on Macy's website. According to Sur La Table's description, the handle is made out of Cocobolo Rosewood pakkawood. It's one of the more beautiful handles I've seen on a chef knife.
Do these knives require stone sharpening or is there an easier way?
Whetstone sharpening is easy and the best way to go. Sure you could use a honing rod or a pull through sharpener but with fine cutlery such as this preferred method is a whetstone. MinoSharp makes a dual sided 220/1000 that is the best bang for the buck. Real easy to learn how to use, just watch a little youtube.
