I purchased it last night and love it so far! I haven't cooked on it yet, but I did follow the seasoning process and it held temperature steadily, normally within 3-5 degrees for more than an hour. At one time, it did spike by 11 degrees, but it quickly lowered. This is much more reliable than my pellet grill that fluctuates 50+ degrees. The lighting process is a bit cumbersome, but I feel like it's a learning curve I can easily learn and adapt to. Granted, the quality could be better, but it is nice and solid, the lid fits tightly, and as I said previously, it holds temp like a champ! And it does heat up, FAST! I can't wait to cook on it tonight!
Have this grill for over a year now and love it. I use a mix of briquettes and lump in the hopper. Couple tips: when first lighting the charcoal, use the hopper as a chimney til the thick smoke stops, you don't want that on your food. Also be very careful of grease fires, was reverse searing Ribeyes while smoking beef ribs, removed the ribs when they were done and cranked the temp up to 650 to sear the Ribeyes and instant grease fire.
I use these and a quick hit with a torch - fits the slot well and never had a startup issue
At the full retail price I don't believe anything offers the ease and versatility (build quality will be the only thing that someone may consider lacking) that the Masterbuilt 560 does, at this price even more so.

Yep. Grease fires for me too. Several. Gotta get better at cleaning it out. First time cranked that heat up had one too.
Would love to sell my GMG pellet grill and try this, so I may bite at this price point. I've heard it produces more flavorful food due to use of charcoal instead of the wood pellets.
It also seems like one of the only gravity fed charcoal smokers in its price class, I've seen other (possibly higher quality/commercial units) going for thousands of dollars more
You can get charcoal pellets for your pellet grill. Pit Boss makes them. Wal-mart should have them
It also depends on your taste. I would much rather have wood flavor. I just did 3 pork shoulders this past weekend on my RecTeq. 18 hours of slow smoking and my pellet hopper wasn't even half empty.

Did you track it with a thermometer or did you rely on the grills display?

I have this same smoker. Buy these fire starters or some like them. They completely change the game when firing up this smoker. I use four of them each time I start the smoker.

I would only use it for low heat smoking, but would always be scared of a runaway. Ik so long as that chimney stays sealed you're good, and seems the best combination between set like an oven convenience vs. still has more flavor than pellet.
Holding out for a weber gravity fed, or the old country at academy. At this price the MB is tempting.

MUCH better results from this than a pellet grill (I had one, ditched it after trying this one). And it's far more versatile than most pellet grills (gets hotter - etc. - almost like having both a charcoal grill and a smoker)

Didn't know about the charcoal pellets.
Regardless, yeah it does depend on tastes. I finally used by GMG Jim Bowie just a couple weeks ago to smoke a brisket (finally got my outdoor outlet fixed). It was the first try and there were a couple things I should've done differently, but it came out edible. Gave some to my parents and they liked the wood pellet flavor over the charcoal cooked brisket I normally do (I used a Weber 26" kettle).
I do wish I held off and bought a gravity feed grill, but the GMG was a really good deal at the time and the Masterbuilt Gravity had just come out and didn't have any reviews.

Honestly to get a good wood flavor, I will smoke my pork shoulder or brisket on my wood smoker for around 10 to 12 hours and then move it over to the pellet grill. I just didn't have time to babysit the smoker this past weekend.
My order from Walmart cancelled due to unusual activity. When I follow the steps for help it says that wrong pricing often triggers it. Maybe they done messed up.
