I purchased it last night and love it so far! I haven't cooked on it yet, but I did follow the seasoning process and it held temperature steadily, normally within 3-5 degrees for more than an hour. At one time, it did spike by 11 degrees, but it quickly lowered. This is much more reliable than my pellet grill that fluctuates 50+ degrees. The lighting process is a bit cumbersome, but I feel like it's a learning curve I can easily learn and adapt to. Granted, the quality could be better, but it is nice and solid, the lid fits tightly, and as I said previously, it holds temp like a champ! And it does heat up, FAST! I can't wait to cook on it tonight!
Have this grill for over a year now and love it. I use a mix of briquettes and lump in the hopper. Couple tips: when first lighting the charcoal, use the hopper as a chimney til the thick smoke stops, you don't want that on your food. Also be very careful of grease fires, was reverse searing Ribeyes while smoking beef ribs, removed the ribs when they were done and cranked the temp up to 650 to sear the Ribeyes and instant grease fire.
Cancellation due to unusual activity ...

How long can you leave this and expect it to maintain temp? I would like to do some long cooks, but I don't want to have to check on it every 30 minutes

I let it run for over an hour last night, and it stayed within 3-5 degrees most of the time. It did spike up 11 degrees one time, but it quickly dropped back down.
I bought this grill about a year and a half ago and have many cooks on it through COVID. Really was amazing since I was working at home I was able to cook on it all the time. The flavor that you are able to easily get out of this thing with the charcoal and ease of use really is pretty incredible.
That being said I have the same issues already mentioned. Flair ups are a very very big problem - I had one last year while under an extreme fire warning for our area and it was very disconcerting. I had not had a flair up to that and would not use this grill in those conditions again. I have cleaned it again and again and it doesn't seem to matter now, I still get them if I go above about 450. There are some mods that are supposed to help with those. That being said I use it mainly as a smoker and cannot really get it up high enough to sear/grill because I cannot trust I wont have flair ups. Also, I would be surprised if I get another year out of this. The build quality just is not that great. For $350 this is a good price I think - and I would not pay $500 unless build quality improved. I also have the "Open Lid" issue where my sensor for lid closure will not register closed anymore (which means no bluetooth control).
You can bridge the two wires together going to the switch to bypass it.
I've had this for a year and I do love it and it gives great flavor. I smoked a strip steak and reverse seared it using my grill and it was the best steak I've ever had.
With that said, it's not easy to use. It is easy to light and control the temperature. But I'm finding that getting a good bark on pork shoulder to be very hard. My old Bradley smoker gave great tasting thick barks for almost no effort.
Here's my list of cons:
Very hard to get quality bark.
I've tried everything and I'm unsure exactly the reason it's so hard.
I stopped going above 300 because of flare ups
The charcoal stack is lucky to last 8 hours, if I buy the longest burning charcoal I can find (B&B). Other brands, or lump charcoal seems to only last about 6 hours (at 250 degrees). That means I'm unable to put it on before bed and wake up with it still burning. And with overnight being off the table, that makes for a long day of cooking.
I could deal with the 2nd 2. But I'm getting fed up with the lack of bark. If I can't figure it out in the next few tries I'm just going to sell it and get a quality Traeger instead. Lets face it, pulled pork is really only good if you get a great bark on it.

I've had my 560 for almost a year and haven't had any of the issues you're describing. I get fantastic bark on all my smokes, beef and pork. I have no problem doing overnight low and slow. I usually use a mix of charcoal briquettes and lump, plus a few chunks of wood thrown into the hopper. My only regret is that I got the 560 before the 1050 came out. I could use more space, but overall, I love this freaking smoker.
As far as people talking about the flare ups... After a long greasy cook, I usually just crank it up to 700 and burn that grease off. Rarely have problems with flare ups and can get a great sear on my steaks and burgers whenever I want those flames, just crank it up to 700 and get some fat dripping.
