Plenum spaces have breathable air routed through them by AC. Attic / ceilings for houses are generally not that.
If I do recall correctly however, 10Gbps ethernet is prone to interference, and also has a much higher power draw than fiber lines. I do hope it catches on much faster, though.
Also unless you know what you are doing, and install the cabling to the standard, you most likely wont "test" out any better than a decent, but easier for the DIY 5E installer.
Personally, if I need over 1GB, You can trunk, you can go Fiber (best), or you can use Coax (shorter runs). I've done Enterprise IT for 25 years, and the standard we use today is 5E to the desktop, Fiber between the switches/routers, and Coax or Fiber from the Server to the Switches. You'll be amazed at how many computers it takes to truly saturate a 1GIG connection.

Open Plenums are rarely (if ever) used in homes, if you have metal or flex ducts (a modern HVAC system usually does). You don't need Plenum rated cable. Usually the only time you see a plenum is in a large (usually multi-story) building that's using the space between a drop ceiling or similar as part of it's air distribution system. And even in those cases, PVC can be used, as long as it's in conduit!
You can't use PVC in those systems as they pull air from the open plenum, so if the cable was on fire, it would distribute toxic smoke. Since Home HVACs usually have a return that's pulling from the living space... there's no need for plenum rated cable.
