I've read conflicting information on how valuable the most recent DOCSIS standard is and how much you need to exceed your plans speeds.

Big differences.
I am running Google nest routers as APs, so I have 5 Google nest wifi routers across my house, but if you aren't running a smart home, 3 should do for a house, 1-2 for apartments / townhomes.
Google is good on visual data for those not tech savvy. The draw back for now is they are not WIFI 6, but most devices in the wild are not wifi 6 yet, so I wouldn't worry about it too much.
I would NOT use the router from Comcast. Use one of these as your router.
I'm on FiOS gig internet, and have regular speeds of 800+ up and down.
I similarly tried the ASUS XT8 in a solo configuration for ~185, and even RIGHT NEXT to the router, out to about 20 feet with clear line of sight, and trying to rotate the thing to give off a stronger signal, I never was able to match the performance of the orbi system, even though it's AC and the XT8 was AX.
Food for thought.
My question is for you folks that are knowledgeable about all this. Would these AC1200 play nice with the AC1304?
If so, I have one next to my router and one off in another room. Would adding this 3 pack be ok for a 1800 sq ft home? I'm not as concerned about overkill as much as would it be not a good idea to spread too many of these throughout my home.
TIA

Even with those AC1304 your not taking full advantage of 1Gbps service through fiber since those AC1304 only usually good up to 550Mbps through wireless. They do have poorer range though as they are made to cover about 1200sq ft per unit probably why they gave you two.

new Google mesh do not have Ethernet jacks on the back. well, the router does, the rest do not.

Someone had to remind me of that, recently.
If you've run Ethernet, you'd likely be going entry level business mesh, not google or EERO.
