In addition to staying sharp longer, good cutlery is typically better made, so will last longer, and often better designed, so more comfortable to use.

If you don't do a lot of cutting prep regularly, or don't want to spend the money for something like this, the Victorinox line of knives are very affordable and well regarded.

If you do decide you want to get into something more like these, the Chef's knife and Paring knife are usually used the most in food prep, so those are often the two that folks are willing to spend more on to get good utility out of their purchase.
Shun knives are a pleasure to use, but will it last longer? That depends. They tend to require a rather gentle use compared to what most people are used to. Drop it once and the tip may bend. Cut through a bone and the edge may get visibly out of shape. And so on. This does not happen to cheap knives as easily, so people who believe that expensive knife means super tough tend to get disappointed.
Well I have plenty of Shun knives (classic and premier, mix of different length santokus, pairing knives, specialty serrated knives, and a bread knife). All are awesome and I would highly recommend them. They come extremely sharp (perfect finish), they look great, they're very comfortable, and they hold up well. Just be sure to hand wash, use only the soft side of a sponge, dry immediately with a soft towel or paper towel. They will hold up fine as long as you don't drop them (I can't imagine why that would happen to most people).

What's also great about Shun is the lifetime free sharpening. I haven't used it yet, I use a whetstone every 6-9 months if needed, but it's good to know I can get a factory perfect finish at any time (only pay shipping costs). If you're on the fence, then go to a Williams Sonoma and try out the knife. Once you try it, you'll probably love it.

If you're on a budget, then just go with Mercer Genesis or Renaissance series.

Cobbled together a classic 8" chef knife, 5.5" santoku, 6" utility, 3.4" paring, multipurpose shears, 9" honing steel, and 6 slot bamboo block. I'm going to give my daughter my old twin Zwilling set. I love Zero Tolerance knives and American made Kershaws and I've been looking for an excuse to try Shun knives. I'm sure these factory seconds will do the job especially since they qualify for free sharpening.

You could get a nakiri, plenty of lots of options other then shun also. (kanhide, tojiro, Tsunehisa, and there is even one on woot right now) I love mine, it's fun to use. My favorite and most used knives are my nakiri and a petty.
I might pick up a clever in the future for bigger veggies. (squash, etc)

Some prefer a santoku, or gyuto (with a good profile) Lots of good brand options there also for as good, or better price/value.

Best bang for your buck is the Sora line. The blades on all Shuns are very similar. Having 34 or 100+ layers in the cladding makes no real practical difference. It is the harder core steel that does the actual cutting. To me it looks like the main difference related to price is in the handles. The Sora line just has a polymer, aka, plastic, handle without rivets. This cuts material cost and the labor necessary for fitting and riveting a fancier handle. With all that said, some of the Shun lines, like the Premier are beautiful looking knives with the very practical swell in the handle to fit most hands more comfortably. For price, though, the Sora line is a great value within an expensive and very high quality line of knives.

I bought a santoku, chef's knife, and pairing knife 13 years ago. I use the santoku every day. The other two almost never.

And yes, cooking knives are only for food prep purposes. If you need a utility knife, get a utility knife. You want to keep these sharp and undamaged.

If you don't know Shun, then these are likely not for you. I'm not being disrespectful either. They're a very well known and reputable knife company but they're a bit more "delicate" than other brands. They're razor sharp but prone to chipping and breaking tips when the average person tosses them in the sink, dishwasher or uses them to cut things they're not meant to cut such as bone or frozen meat.

KAI also owns Kershaw and Zero Tolerance knives which are also very well known.

This. The heat treatment is as important as the type of steel, from what I understand. Not every VG-10 is equal to the next. I have some VG-10 that are a bit more durable. Also have a petty in AEB-L and it's great.

I bought the sandwich utility knife because it's so handy and have been wanting one since I realized out how much I liked my mom's (she wouldn't let me have it, haha). It's great for what it does but over priced normally, IMO.
I do see how they can be appealing for some, especially with the sharpening service.

Shun make some incredible knives. Not all of them are top of the line but they have some that are up there (which is the same for basically al companies) but tbh Ive never used one that i didnt love (for its purpose of course) and I have enough chef knives at this point that i could sale them and buy a car lol.

My daily driver at work is a classic shun 8" thats 11 years old at this point and still feels as good as the day i bought it.

This is what sold me. Went into William's Sonoma (or Sur La Tab, can't recall which) and cut up a apple with a Shun Classic. Made my pricey Whustoffs look like shit.

My main go to these days is the Hikari from WS. Don't try it unless you are ready to buy because the dual core blade is pretty far ahead of the Shun classics I own. Also holds an edge at least 50% longer.

I will say that I have NEVER had chipping issues with my Shuns except the small pairing knife that came with a knife block I bought. Pretty sure it's defective, it's never used on hard things and constantly has chips appearing in it despite very little use compared to my other 5~ Shuns.

Shun are a decent, mid range knife. Most of their knives have a VG10 core, which is a decent knife for kitchen use. As others mentioned, the edges angles are a little thinner than Western or German knives, so they can chip if you are a little rough with them on things like frozen meat, etc.

That being said, some of their knives are gorgeous. I bought a Shun Taiyo (SG2) many years ago and it's still going strong. I've never had any issues with chipping or damage to the blade. But I also wash my knives immediately after using them and put them away.
