Potentially. If your dock is actually a thunderbolt dock passing through video naturally over the pci bus, then no. If its literally a USB C hub that basically converts a USB connection into a limited video-out circumstance, then yes.
Is this good with external GPU? I'm a student working with macbook, can I take this as a gaming PC?
No, you'd want something with a Thunderbolt 3 port like an Intel NUC. With external GPUs pushing $800+ just make sure you're not better off with a gaming laptop or desktop.

Not sure what you're trying to do, but I have this setup.
One monitor connected to Dell docking station which is connected to work laptop.
Same monitor is connected to Intel NUC, so I have to change monitor input to switch computers. The NUC is connected to an external GPU via Thunderbolt.
They keyboard and mouse are Logitech Flow so you have to click a button on each to switch them to the other PC.
