The ones I have received from Italy's Best Coffee: have had expiry dates that were 10+ months out

Shelf life means little as it's all about date of roasting of which Peet's is one of very few who list that. If concerned, freeze the beans.

I'm not sure if this is the same bean that they carried at Costco a while back. I didn't care for it. Too acidic for my taste.

Technically beans begin to stale after roasting, so to get the absolute best you'd need to use a local roaster and grind them within a week or two for freshness. Bagged like this, I wouldn't exactly concern myself with freshness because none of it will be.
