While, I've received beans not airpacked, they weren't stale. Always throw my bags in the freezer. October 2021 seems like a very early expiration. I have two bags sitting in my freezer from December that have a November 2021.

Keeping your coffee in the freezer doesn't help at all. In fact it's actually worse.

I'd avoid the Rossa, even if it's fresh, unless you are doing some home decorating and need to remove a layer of paint.
buy large amounts of green beans from sweetmarias (they don't age as does roasted coffee) and roast it yourself for a week's supply. It often ends up as just under 7 bucks a pound (pre-roast weight).
you will spend money on a good roaster, ideally one that has lower smoke, and will need a true kitchen vent rather than a fan that recirculates.
the roaster is expensive but i'm sure it's paid for itself after a couple years... and more importantly you can start enjoying coffee that is fresh and not drastically over-roasted like much of what is sold in stores.
