The antimicrobial properties of copper and the purification effects of activated charcoal are well documented and widely used in both consumer and industrial settings.
Activated charcoal is extremely porous and is a great filter -- commonly found in air / water purification plants, sewage treatment, A/C filters. It also is used by hospitals to absorb some poisons for emergency detoxes.
Using copper to prevent infection has been documented since ancient times -- but scientifically, it emits ions and disrupts bacteria cell walls.
Having said that, I'm not sure if any of these pillows have high enough concentration to make a big difference.
Pennies are covered with copper. When you handle a penny on a sweaty summer day then smell your hand that weird smell is the copper interacting with organic matter that's making contact, namely your hand.
