Agreed. I only have time to game on switch because I have kids and sitting in front of the tv for hours is a no go

As people have already said. It's on Game Pass so this isn't needed really, if your are getting for PC / XBOX

There are a good deal of QoL changes like the ability to craft anywhere and quick menu for travel, but it's not enough that I would restart unless you're very early in the game. Obviously, if you're starting fresh, then there's no reason to play the old version, but you also can't buy the old version anymore.
Probably not, unless you're a big fan of old DQ games or really want to replay the game. The core storyline and gameplay have not changed. The largest addition would be the 2D mode and the Tickington line. Tickington is just a series of bite-sized vignettes from other DQ games; if you haven't played those, you probably won't get much out of it. There are some additional post-game bits to play with, but they're largely things you already experienced, just pumped up so you need to be level 99 (and for the last one, you need to grind incredible numbers of stat boosting items lest you be one-shot by everything).

I'm basically at end game. But the QoL seemed great. I guess if I choose to replay at some point I'll just pick it up used for similar price, or just play on gamepass trial.
