I worked at Coach for 6 years. It's true that there are factory lines sold only in outlet, but the difference in quality is barely noticeable. Truthfully, it comes down to which collections are better constructed as opposed to a blanket difference in quality. I'd even go as far as to say DON'T shop in the full price store because the quality difference is basically negligible. Coach will warranty all their products (from workmanship defects) for 5 years, regardless of where you bought it.
I'm 10 years removed from working there, but I still shop there from time to time. I work in luxury retail now and bang for buck I truly think Coach makes super quality stuff even compared to the company I work for. Even if most of it is made in China these days. I can't speak for other brands you brought up, but you can feel confident that you're getting a quality product at Coach
Be aware this outlet (and many others like it, like J.Crew factory, Banana Republic's outlet, etc) don't sell real mainline products. These companies have lower-quality products made specifically to sell at their outlet stores so they can fleece shoppers who think they're getting a high-quality product for cheap when largely you're paying for low-quality trash that will likely last a year before falling apart.
Your best bet is to watch and wait for sales from the mainline brands, and even then it's worth doing a bit of research so you can identify a quality product vs cheap shit that a company is using their brand name to sell. One of the best ways I've found to know when the mainline products go on sale is to simply sign up for their email newsletters/alerts.

Not Fake! Purchased several items from the outlet. Even had one bag repaired within warranty at the official Coach store in the mall.
