Good deal on a tri-ply clad similar in performance to Cuisinart's MuliClad Pro and All Clad's D3.
Has a helper handle and the sides are sloped more gently than other pans making it similar to a shallow wok style which sacrifices a bit of the flat surface area.

The photos on Home Depot are incorrect showing a pan with steeper sides. It will be the pan as shown on Amazon with the gentler sides.

I mentioned this in my original post, but I guess the mods removed the info when they posted it to the front page.
Also some more info that was removed: because of the gentle sloped sides the flat cooking surface area is a little small for 12" pan.

I have a carbon steel wok and its problem is its not completely flat at the bottom. Thats fine if you have gas stove but not for induction as its difficult to get it to really heat up. Also I've seen it get rust a bit on carbon steel which I have never seen on my ss items
I think Cuisinart has a lifetime warranty so if you aren't able to return them you should be able to get them replaced under warranty.
Kirkland sets are good. We got an 8 piece set of their Italian made All-Clad clones, 20 years ago, around $120. Great set. Used daily. Got a set for the kids a few years ago. Not Italian. Not All-Clad styling. But, very nice. Around $150.

I also have multiple pieces of Allclad and Tramontina and I can't tell which brand I'm using when cooking with induction. Personally I'd save the $257 difference. Finally, this pan is made in Brazil, and like the Demeyere, has shallow sloped sides.
Thank you. Your generalization that mid-priced cookware, from decent brands, can perform as well as the snob brands, I've found to be accurate. That said, the real budget lines, like Tools of the Trade, and similar, are not very good. I've gotten great stainless and all types of cast iron, without having to pay for a name. It pays to shop around, evaluate the quality, and spring when they meet your budget. Cookware is always available.

I have the DeBuyer Mineral B from Amazon. It's heavier than some other pans but I really like it. Even the Ballanari that is cheaper works well but is a bit thinner overall.
Carbon steel WILL rust just like cast iron if the seasoning is taken off. It is easily remedied by wiping on and heating some oil until it starts smoking and continue until the smoking stops. You'll add a new layer of seasoning. Avoid abrasives or strong dish soaps and you're good to go!

Please just google it on YouTube. It is not the same as the seasoning that we put on cast iron.
It works if you do it right. You are correct on buying carbon steel as well, great addition and inexpensive.

Me too. Stainless saucepans are fine on low heat, but I tend to burn stuff in stainless skillets that obviously has a lot to do with the heat. I do better with cast or high carbon.
Meanwhile, I refuse to buy another skillet that does not have a lid available.
