But damn delicious. I smoke them now. But if I had to cook inside, I'd do this.

I have a gas stove that goes 550 that I rarely use, no microwave, A brevile Air, A sharp super steam oven (which I use as a crude combi oven, and crude sous vide oven, got it for $200 a few years ago at BB)
https://www.bestbuy.com/site/shar...lsrc=aw.
Got a few sous vide wands, a 13" circular baking steel that fits in the brevile air, I have a boxed weber but can't get to it till I move out some boxes out of the way from when I moved.
I have a butch cast iron Smoker I've not yet used. It's a masterpiece, BUT it's old school so it takes constant manual attention. I even got a Blackstone pizza oven boxed I can't get to behind other boxes.
I also like to do coffee pourovers, and make cappuccino-like drinks with an aeropress.
Look for a deal on the Meatly thermometer. Perfect for kitchen cooks who use uber toaster ovens. Just got one for $73 a week ago. Maybe deal will come back tomorrow. It is a cordless thermometer you put in roast and just put in oven. can monitor temp from phone while using internet, and waiting. My Thermoworks SMOKE, and bluetooth DOT use a braided cable that's a pain to work with and keep clean.
Thermopops have been on sale for dirt cheap lately, like $35. I grab my thermopop more than I do my thermapen because I don't like flipping out the needle.
Also, you have a cool grandma. Mine is no longer with us. She was 103. So awesome.

I also have thermopen etc.
but truth, we didn't smoke much this year….
Last year 3 pack cyripack ribs at Costco was 20-25 bucks for 9lbs. Massive baby backs.
Brisket could get a full brisket for 60 from Costco, and trimmed for like 40.
Used to be able to get 4 beautiful rib eye steaks at Costco prime, for
28-30 bucks. Same packs are like 60-70 now. Not even exaggerating.
Those are like 90-100 bucks now.
I also lost 25,000 in stock options, so my mistake mixed with raising prices. We've unfortunately been sparse with the finer meals. Chicken… chicken.. and moar chicken.
And those prices are going up. Damn saddening.
My newest cooking adventure will be Detroit style and Sicilian pizza. Bought Lloyd's pizza pan off amazon 10x14 and very excited to soon make some legit pizzas. Nomnomnom. Put the kitchen aid to work other than mixing : grinding meats
I have never sous vided. I need to look into it.
A combi oven (lets you control humility/steam and temperature independently) have never been available in home kitchens till Anova released their Precision oven about a year ago. Typically combi ovens are used in commercial food industry and cost many thousands of dollars.
Anova Precision Oven is on sale for $500 instead of $600.
If you really want to know more. I suggest you skip buying sous vide wand and study up on the Anova precision oven on youtube. Oven lets you do things like sous vide (in humitity instead of water) till internal temp hits certain temp, then change to dry hotter heat to get brownness. It's all script able and programmable. It works just like an oven would if 'they' let me design an oven.
I do highly recommend studying sous vide technique and temperatures info. Just apply same principals to Anova Precision Oven.
Heck, I apply a lot of sous vide technique and temperature wisdom to food I cook in a dry oven and even in pan on stove.
The Anova will humidity cook up to 212F, steam cooks past that, can also cook with dry heat. Can hit high and low temps, be it moist or dry. So you can dehyderate foods, sous vide, roast. It's like way better then the breville air. and I alwasy loved my breville air so much.
Here's a quick youtube link to videos about the Anova

I joked to my girlfriend "Looks like we are going to have to hole up and eat a lot of Chef's John lemon greek chicken." She loves Chef Johns lemon greek chicken. And that's my segway to live you the link. Probably the easiest recipe anyone can make that is so fricken good.

Perfect to make in a breville air, in any pan, I use a 3.5 cast iron braiser.
