Not too familiar with this company but after some searches seems legit. Please tell me otherwise. This is the lowest price I've ever seen this M1 Mac Mini.

I rather get it from Costco for a bit more. Costco Is easier to deal with for any issues or returns.
Connection is legit but they are more of a business to business company with old school order processing. One time I had to call them to get my order procssed.
If you're on macOS Monterey, you are probably experiencing the memory leak bug, however, the OS will consume any empty memory as it sees fit, and reduce consumption as you open more and more tabs in Chrome. I have a 8gb base model MBA, and a Chrome tab whore, and have never seen the 8gb more than medium compression in Activity Monitor. I have almost as many tabs open as I do on my iMac with 32gb of memory and MBA is still far faster (probably due to all SSD).

Plus, if you look up the 16 vs 32gb memory comparison videos on YouTube of the new MBPs, there's literally no difference unless you're trying to do everything else anddd edit an 8k video file.

I'm looking to pick up a Mac mini today. Is there a difference between this late 2020 model and the current one that would be worth spending an additional $150?

Late 2020 is the current model

I also got the 8gb originally, and it was great for the first month and a half, but ultimately I also needed 16 gigs.

There is a known memory leak in MacOS Monterey when using custom cursors and pointers. Details with the fix here:

Now I'm worried since their courier sucks.

Fresh OS reinstall will fix all that, boomer.
Regarding your uneducated reply, I mainly work in Linux and program system-level stuff. If it were Windows I would totally expect dozens of reinstallations. But I held a different expectation for Apple as I never really needed a fresh reinstall to fix anything. My 2018 MBP never needed OS refresh and still working totally fine, even though I did various system-level tweaks and have bootcamp enabled. Mac Mini M1 was buggy from day 1 and none of the OS update actually solves the problem.
