In my experience the non sapphire screens are still very good and most don't scratch them unless your plan to be very rough with them. My fenix 5 non sapphire lasted 2.5 years before I got a small scratch on screen and I have done multiple obstacle course races with it.
It is a sports and fitness oriented model, and it is the best at that. Is it a good smart watch? Yes, it does that to.
Garmin is for folks that put a priority on tracking activities over having a smartwatch that does everything else.

I'm not am expert on this model but i would assume that Sapphire one has a Sapphire Crystal protected display versus the (Gorilla?) other one? Sapphire would be more scratch resistant than the other one.
There could be other differences as well.

No worries, I hate Apple Music and have never tried Spotify, but that's encouraging that you're not stuck with some proprietary system (Amazon Music and Pandora are my main two). Older Garmin devices had a bad habit of reinventing the wheel…poorly

BTW, if you have never owned a Garmin before, I highly recommend you pickup a Garmin Fenix 5X Plus Sapphire for $250 refurb first before you invest this much into a watch. I have been very pleased with my 5X Plus and will be skipping the entire Fenix 6 series.
