I have this one and my brother in law is 325. He floats just fine in it. no issues. It's a really great kayak.
It can't be done "cheap", but it can be done "cheaper". We own four kayaks, two of which are fishing kayaks (although most of my fishing is actually taking my daughter, so we're in the "non-fishing" tandem kayak more than the fishing ones!). For them, I've bought 4x$40 paddles, 4x $40 paddling life jackets, 2x $15 milk crates w/zip tied lid, 2x $15 anchors w/paracord and a diy pvc/pool float "buoy", a couple old mayo jars with holes poked in them for a bait bucket (shrimp mostly). I use fishing gear I already had, except I added a pair of fish grippers instead of the net I use from land. In all, other than the yaks themselves, I've spent only about $400. We use them on a local creek or our river in mild whitewater and take them camping where I fish, so we get a good bit of use out of the kayaks and the gear.

Thanks... that would also allow my wife to go out with me sometimes without needing to worry about her paddling (back & shoulder issues). I appreciate the big-guy perspective.

I have bought one for $299 last June forma trip to cape cod. I generally buy a kayak, then resale before I leave after a week. This kayak, although not the best, was good enough for me to successfully sight fish for stripers on fly. It was stable enough for me to stand and paddle and cast to fish. The padded area is not very durable as after a week, it started to come off (I was fishing every day all day though). It is not very fast and be careful in fast moving waters. More importantly, make sure you attach the paddle to yourself as it does NOT float very long. Overall, I had fun with it landing over 250 fish in a week. FYI, I used to be a pro tester for kayaks and I have been a pioneer in kayak flats flyfishing when no one was doing it the way I was 22 years ago.
