Yes. Unlike many other banks, you can only get Amex credit card sign up bonus once per lifetime. Chase and other banks typically allows you to get the sign up bonus once every 24-48 months depending on the card.
My wife "accidentally" got 100k points sign up bonus from Amex platinum twice. We pretended it never happened and sure enough they clawed the points back 4-5 months after without warning. Sent us a letter in the mail too. We tried to appeal but it didn't go anywhere. In hindsight, maybe we should have spent the points but we would have to empty all our Amex points. In this case,
being statement credit. I would not risk it and bank on them honor the "deal"
Everyone who is familiar with point manufacturing and credit card churning knows about the dreaded Amex financial reviews. They definitely don't let things slide. They banned people who abused their credit card policies for life.
I'll add the "special offer" to my card bc it's free but can't see any way that I'll be spending $30k in the next 3 months. Especially now that I just got the Amazon Prime card
Anyhow, I'll probably get some bonus points so thanks OP. Just wish it was $5k in dollars back instead of points!

Already did. The only thing confusing is the one or more eligible transactions. Kinda makes it seem like I could spend 2500 in multiple purchases to hit the 2500 spend to get 3500. But I didn't chance it. I bought a MacBook at the apple site and I'm waiting for that to finish posting. And then maybe I'll hit up Best Buy.
