The order of the story is the order of the titles: 0 happened first, 6 happened, and then (I believe) Judgment, Like a Dragon, and Lost Judgment. The Kiwami games are just remakes of the original 1 and 2. Dead Souls isn't really canon and honestly was nothing more than to cash in on the zombie craze of the time.
As for what order to play them in, that's a hard question to answer. All of the games that don't use the Dragon Engine (Yakuza 6 and Kiwami 2) simply feel... archaic. Like they're not bad games by any means but the games just feel like they're a generation or two behind in terms of presentation (loan load times, slow/cumbersome menus, clunky movement/camera, etc.).
I played the original series (Kiryu's) on their original releases (and the Kiwamis too) so I can't speak on Judgment/Like a Dragon but if you do play them chronologically... you're in for a somewhat up/down ride in terms of how game presentation. Yakuza 0 is arguably the best overall game in the series given it's so content rich (and has the best side-missions in caberet club/real estate) but still felt like the presentation was bad. Yakuza 6 with the Dragon Engine (which was also used in Kiwami 2) was the first Yakuza game to actually feel and play like a modern game and was honestly, my personal favorite. I'd honestly re-buy 0 if they re-made that using the Dragon Engine.
I'd probably just play them in chronological order (0, Kiwami 1, Kiwami 2, 3, 4, 5, 6) just because these are story driven games.
